What's in season: Oysters

Oysters from the Lowcountry have a distinct, salty flavor. That's because the waters here are saltier than in most other oyster-harvesting areas. There are no fresh water rivers or springs flowing into our estuaries -- so the oysters grow in a pure, high-saline environment. May River oysters from Bluffton are famous, as are the oysters from St. Helena Island. Ask for them at these local restaurants: Bateaux, Saltus, Gilligan's.
